The table below should
be used as an approximate guide to the nutrient content of the vegetables.
The values presented are averages of a number of different tests. Nutrient
content can vary depending on soil type, season, geography, weather, method
of preparation, method of analysis, and different varieties of the same
vegetable. The data are presented for a typical portion size - usually
28 grams, or one ounce, but may vary depending on the vegetable. The information
comes from several different sources including:
